1 lb bag of pink or pinto beans, rinsed and soaked
2 lb ground beef
7 cups of water
2 cloves of garlic minced
1 poblano pepper, diced
1 onion chopped fine
1 Tsp oregano
2 Tbs. salt
1 Tbs. cumin
2 Tbs. chili powder
Cook on LOW 8 hours. Serve in heated oversized tortillas and add:
salsa, cheese, sour cream, & guacamole.
*Serve with Spanish rice.

Ginger, this recipe sounds perfect for our family. I was wondering though, do you brown your ground beef before adding it to the crockpot?

I'm sorry, Ginger! I really do read them, but apparently I am not reading closely enough. I guess I'll have to have the kids or hubby read it before I ask questions anymore. I actually did read the part about not cooking beef and turkey before putting it into the crockpot, but have never actually head of people cooking raw ground meats in the crockpot. Do you cook it in a lump in the crockpot with the other ingredients around it, and then crumble it up after it's done cooking or do you crumble it into the liquid in your crockpot? Sorry, I won't ask anymore questions, but this isn't something that I'm familiar with, and you wouldn't know it by reading my questions, but I am a rather seasoned cook and baker....and do a lot of cooking for other people!

Ah-ha! I just found this! You were holding out on me! (You sent me recipes--thank you, thank you!--and then never mentioned other blogs! With recipes to boot!)
Question: I am lactose intolerant, is there a substite for whey? Otherwise I'll just omit it and have the beans with just water.
I've never had success with beans but once. I always do SOME thing wrong-ha! You encourage me to try again. :)
