1 lb. chicken, diced
1- 8 oz. can sliced water chestnuts, drained
3 cups orange juice
grated peel of 1 orange
3 Tbs. soy sauce
2 tsp. grated gingerroot
1 clove garlic, minced
2 cups dry brown rice
2 cups chicken broth
1- 10 oz. bag frozen broccoli florets
Put all into crock-pot, except broccoli, and cook on LOW 6-7 hours (edited). 1 hour before serving, add broccoli and continue cooking. Do not stir until ready to serve.

Do you think leaving out the gingeroot would change the flavor entirely too much? We're not big fans. But it looks really good...

ginger, do you even put the rice in the crockpot? In the photo, it looks like the rice is under the chicken mixture?

Well, ya gotta be more specific than that, silly! :) Gimme some helpful feedback for those that haven't tried it yet.
Well, I wonder if my crock pot is too small for one thing. Liquid almost spilling out. This is the 2nd recipe where I have wondered if you had a typo on LOW vs HIGH cooking level, because after hours, rice still crunchy and not sure meat was done. So turned it up to high for a few hours, then it just turned to mush.
The chicken and dumplings recipe was the same way. Potatoes not even close to done and then the tortillas all fell apart and was a pot o mush.
Could it be my crock pot is just too small? Not sure of the size but it is the standard one you see in the stores
Well phooey, maybe it's the brand and size. I have a 7 qt. Rival. (I haven't had as consistent results w/ the William Sonoma I used to have. Go figure.)
Mine's the big oval one. Keep in mind, I'm feeding 9. I have a big crock-pot and I feed a lot. ;) I have been trying to add more small family recipes tho.
There's another thing I tho't of that I do and don't write down: I put the rice in the bottom of the pot, then layer the rest on top. And I never stir it until after I turned the crock off. This goes for all rice recipes.

This didn't work for me. After almost five hours the rice was still very crunchy. I was thinking you must have meant cook it on HIGH. Had to dump it in a pot and cook it on the stove so we could have something for dinner, but texture wasn't great after all that cooking.
I am SO sorry to those of you who've tried this recipe and it flunked. You were right - there was a typo. I don't cook it on high, but I do cook it longer. My apologies!
I tried this recipe today, didn't even look at all the comments but decided on my own to cook it on HIGH to speed up the cooking time and it took about 5-1/2 hours for the rice to be done. I also used 6 leg quarters and doubled the rest of the ingredients. I had a teensy-bit of spill-over, but nothing a quick wipe couldn't fix. Turned out great, thumbs up and thanks!
