Mexican Rice Bowl

Here is yet another Rachael Ray conversion. Can you tell I'm a fan??



2 Tbs. butter
1 Tbs. EVOO
1 lb. chicken, cubed
salt & pepper to taste
3 cups rice
1 1/2 qts. chicken broth
1 Tbs. Sazon seasoning
2 cups salsa
1/4 cup olives & pimentos, sliced
2 Tbs. chopped flat-leaf parsley

Add all but the last 3 ingredients to the crock-pot and cook on LOW 4-5 hours. Stir in last 3 ingredients just before serving. Serve with tortilla chips and extra salsa.

I use my crock pot atleast 2-3 times a week. In fact I just had to retire my 6 quart oval one because it was not working properly (hot spots, burning, cooked WAY too fast, etc) Actually it never did work right. So I bought a 4 qt Rival (round) which really just is not big enough for our family! I knew that when I bought it, but I wanted a ROUND one! My mom thinks the round ones cook more evenly, have less trouble with hot spots, etc. So I'm planning on looking for a 6 quart round. Just wondering your opinion on sizes, shapes, and brands. Please share your expertise!!

Round or oval doesn't make any difference. I like Rival and All-Clad (Williams Sonoma)the best. I have two 4 qts. and one 6 qt. Only one of them is round and I have noticed no difference whatsoever. For my family the 6 qt. is used most often. I use the little ones to make beans or lunch items (for just me and the littles).

Oh, Ginger, I just noticed you had a crock pot only site! How wonderful. I will try to get my kitchen "picture worhty" as all our school stuff is in there. I will at least post my crock-pots. :) I also have Americana theme stuff too.

Is the 3 cups of rice, raw rice?? Or do I cook the rice first before adding it to the crockpot? Maybe a dumb question, but I really don't know. I would think it would be raw rice except 3 cups of raw rice sounds like ALOT of rice.

Yes, raw rice. You can use 2 cups raw rice if your family is smaller. I'm feeding 9. :)
I added a note on the top right: all the recipes feed 8-10.
