Red Beans & Rice

I soak the beans Nourishing Traditions-style overnight, then drain and add to crock-pot:

1 lb. Dried kidney beans

3 qts. Water

2 cups brown rice

1 large onion, chopped

¼ cup olive oil

1 lb. Smoked sausage, sliced

2 cloves garlic, minced

1 bay leaf

1 Tbs. Pepper

2 Tbs. Chopped parsley

1 tsp. thyme

2 tsp. salt


Cook on LOW 6-8 hours. *Serve with cornbread.

This is in my crockpot as I type...we are living in a hotel right now and have only 2 crockpots and a microwave to cook with so I am excited about your new site!

We are having this tonight for dinner. The only problem is that after 6 hours on low there was still ALOT of water and the beans were really hard. I turned it up to high and hope that it will be ready soon, we are getting hungry. I think my pot just cooks REALLY low on low and I have to do more things on high, or maybe 1/2 time on low and the rest on high? Can't wait to taste it, it smells delish! Tomorrow night we are trying your African Curry Confetti. Here's to crockpotting! :)

Holy cow, Faith! Did you soak the beans overnight?
In your case, I would cook it on high for 3 hours, then switch to low for the remaining time.
Hope you got dinner before bedtime!

Uh, no didn't soak the beans. Now I'm embarrassed but your directions didn't say to so I am blaming you, hahaha! Yes, it worked out fine and was delicious. We all loved it. Next time I will soak the beans... And is there a way to make the rice not so goowie? Maybe put it in later in the day? Do you think that would work? Overall it was a great meal, thanks Ginger!

OK. now I see that you DID say to soak the beans... I just didn't write that part down when I wrote out the directions. That'll teach me. Sorry for the accusations:)
