Smoked Sausage Chowder

Note: This recipe yields 4-6 servings.


1 lb. Kielbasa sausage, chopped
1 C. salsa verde
1 clove garlic, crushed
2 C. frozen corn
15 oz. can diced tomatoes
15 oz. can garbanzo beans, drained
2 C. chicken stock
1/8 tsp. crushed red pepper
1 Tbs. chopped fresh cilantro

Add all but the cilantro to crock-pot and cook on LOW 3-4 hours. Add cilantro just before serving. *Serve over rice.

This was SO good and such a hit with everyone. I had to sub. dried cilantro for fresh and used fresh red pepper instead of crushed because it's what I had. We will definately be making this one regularly!

Oh my does this sound perfect for our family! This may just have to become a regular item on our crockpot menu rotation....will give it a try this weekend!
